New Android phone, advice on installing from scratch

I had quite a nasty accident with my Moto G6 Plus yesterday involving at least 10 cars on a roundabout and this is the result

Anyway, since I loved the phone so much I'm just about to pick up the Moto G8 Plus but I don't want to connect to Google and 1000 APPs installing on my phone (I've tried a lot over the years).
How do I stop this from happening so I only install what I want?

You can log into your play account on a computer and delete a load of apps from your account for a start but after that, if you don't log in as part of the setup or don't pick restore you'll get much the same and be able to install app by app I'm pretty sure.
 
Otherwise once you've got the thing up and running you can go into the play store app and pick cancel on all the pending installs I think.
 
My phones have never installed all apps when I start them up. Not sure what the options are, but I've always picked and chosen the ones I want.
 
Blimey this has never happened before.
I decided to let it do it's thing and it is putting my APPs in exactly the same place on my screen.
 
It will set up your phone nearly a before, you may need move a few icons around or change few settings in some App like mile to km or such.

The option "Start Over/Fresh" someone mentioned above still lets you grab all your Apps from Google Play store but you choose manually what to install or not from your Google Store Library but it still remembers the settings.

If you want it to install with every setting defaulted then there is a setting in the phone menu next to the Google Phone Backup (this runs Auto every so often) and its to do with remembering your settings for Google Play installed Apps including licences for AV etc.
