New build RAID & HD advice

Hi All,

I had a HD failure last night and rather than faff around with rebuilding a dated spec with fresh drives I thought I'd take the plunge and get all new gear.

I'm looking at this bundle:
Krypton Intel Core i7 950 3.06GHz @ 4.00GHz USB3/SATA 6Gb/s Overclocked Bundle - Gigabyte

But i'd like to ditch my current HD's and I'm trying to work out what solution would be best for me. I currently run RAID 0 for my non system data but I'm always a bit wary of it. I primarily use the PC for audio production so read speed is top of my priorities. I'd like at least 2TB of space so I'm thinking 3x drives in RAID 5 would be the best solution.

Perhaps 3x of these:
Seagate Barracuda 7200.12 1TB SATA 6Gb/s 32MB Cache - OEM (ST31000524AS) [ST31000524AS]
@46.99 each

Is the 6Gb/s interface even worth worrying about with a non SSD?

If I go for RAID 1 then I'd prob get 2 of these:
Seagate Barracuda Green 2TB SATA 6Gb/s Hard Drive - OEM (ST2000DL003) [ST2000DL003] 5900 RPM
57.49

But thats only 5900RPM so i would have thought when you take into account the difference in raid and RPM then there would be a significant speed loss.

Typing this message out I spose the decision is easy but I'm seeking a bit of validation that RAID5 is the best option here and perhaps some suggestions of decent HD's for the setup that are around £50 a pop.
