ha - Where's my calculation gone wrong then?

The ram I chose reduced the price by - 157
The case I chose reduced the price by - 125
and the gfx card I chose reduced it by - 30
= 312

£12 under budget if you spend 300 on card

The review on bit-tech suggested getting more fans for the Define R2 if you're going multi-gpu/will be overclocking. Looking through the case thread in Case Central, plenty of people have added a couple of 140mm fans in the top, or an extra 120mm in the front.
