New gpu for a i7 950.

The main voltages to tweak on x58 are cpu vcore and qpi dram voltage, aka vtt. Ram voltage is usually 1.65 on tri channel kits, but as the volts only go up in incremts of 2 ie 1.64-1.66. Setting 1.66 is fine. If you need any advice just ask in the overclocking forum. You'll get plenty of good advice.
 
Going by your comments about clocking your CPU I would suggest the gigabyte 780 out of those two, as the EVGA will only be better with fairly serious overclocking.
 
I run a similar CPU and 780 with no significant bottlenecking.

Indeed i often run the CPU at stock tbh as it makes little difference when not benching.
