My 2 Seagates are comin soon. I'm basically can I leave my current as it is for the time being and just install a new Windows partition on the 2 new ones in RAID0 then copy all my old files from the old one to the new ones? Or will I have to backup to external storage device and reformat completely?

It might be that it is late at night but I need to check what you are asking here. You have an existing (single) hard drive and you now want to put new hard drives into a Raid0 array then copy across the existing files? If so that is perfectly possible, to be absolutely sure of it working I'd suggest disconnecting the existing hard drive before installing Windows onto the two new hard drives. After that point you can reconnect the existing hard drive but make sure that you set the correct boot order in the bios, then copy across whatever files you want.

I'm not about to ask if you have checked out the positives and negatives of Raid0, I'll assume you've already done this. :)
