The 160Gb iPod Classic is just stupidly over indulgent! I can't ever see me getting anywhere near 160Gb of music.
plus you don't have to plug it into your PC if you've got Wifi, iTunes in Wifi mode for sending/playing files I guess should work, though it'll be a tad slower sending stuff over. (Will have to when charging obviously)
The touch iPod doesn't sync with iTunes wirelessly. The Wi-Fi feature lets you browse the net, watch videos on youtube, and buy tracks from the iTunes store - but not sync with your iTunes library!
