It depends on the type of number crunching and the platform. If you are using a prog (like Matlab) that can itself use the Intel Maths Kernel Library BLAS (v10.3 is optimised for multithreading) you could do a lot worse than 2nd gen i7 with HT. Get a mobo with quad-channel RAM support.
i7 3930k with 64GB of quad channel ram on a good mobo should do it. Built in iGPU if you need to hook a screen up. 6 cores running as 12 with good memory access will devour the numbers
