You say it is possible to add/change various parts of the watercooling setup, would it be too much to add a gpu block considering the size of the reservoir/pump?

unfortunately not. by adding a gpu block to the loop it would rattle around inside the case. you would also struggle to fit the block to the card.

I am looking into adding gpu only blocks into the cases though.

if you wanted to add a full cover block, I would suggest buying a kit and doing it yourself as you could make it a lot neater.

Any chance of some more pictures of the prebuilt cases I would expect customers on the site would appreciate it also
