New to M.2 - need some pointers

I have an ASUS Maximus Formula XI sitting here for my new build. It has two M.2 slots.

Is M.2 a big advantage compared to SSD?

Assuming I wanted 2 TB of M.2 - what are considered to be good models and should I go with 1 x 2TB or 2 x 1TB?
 
Ssd to nvme isn't a massive difference and doubtful if you'll notice day to day unless crunching hard.

Having said that, I went for x2 1tb Evo nvme :D. Got them for a bargain price and cleaner install than Ssd. I use a 2tb ssd for backup.

Doubt you could go wrong with the Sammy's. Just compare with others on the web. 2x1tb vs 1x2tb would depend on price for me.
 
The only time I notice the silly speeds of my Samsung 960 Evo is that it loads games quicker than 90% of everyone else where being first in lets you get your choice of class/character.

I recently upgraded from a 4 year old SSD to a 970 Evo. The only difference I have noticed is in the speed that Windows updates get applied. No other differences noticed at all.

2 x 1TB must be better.

There is a massive difference between M.2 NVMe PCIe 3.0 and SATA III SSD:

8GB file copy to a folder on the same drive:
time for completion:
0 min: 37 sec: 02 M.2 NVMe PCIe 3.0
1 min: 30 sec: 16 SATA III SSD
7 min: 53 sec: 04 SATA III HDD

 
Windows loads quicker, it's like literally press power on button, type password, and in Windows. That quick.
 
I went from having a 2 ssd raid setup to having m.2 raid setup definitely a lot more responsive windows loads in a flash updates go thru quicker, was playing on a system with a mechanical drive couldn't go back to those days
