Seems like it's working fine for now for regular use so I'll keep monitoring it and keep those ideas in mind if it plays up again.

Dude this is the problem. Each plug on the card needs it's own cable direct to the PSU.
The GPU is basically not able to get enough power.

You've got to put the card under load to see if your issue is fixed. You say 'regular use' I infer from that internet etc, that's not going to stress your system.
I just tried a higher end game again and it crashes. It's fine when not under load. Must be the PSU as others have said.

That's the exact issue I had years ago. It was the PSU.
Got in touch with customer service and they recommended a new PSU so I've ordered one. Seasonic Focus PX-850 850W 80+ Platinum Modular PSU.

You'll be fine with that it will power everything except the most extreme systems, and a 10 year guarantee.
