Sound works fine on the handset via the headphone jack, but the volume control is missing from the screen without anything plugged into the headphone jack.

No sounds on youtube or recorded videos or music, audo plays fine via the dock port in docks.

I've completely wiped the unit - anything else I can try? Sometimes I can see the volume control but it soon disappears.

Sounds to me like the dock port is borked - the phone appears to think that it is plugged in via line-out all the time (in other words, it thinks it is docked all the time). Dirty port or broken.

Could try giving it a clean with isopropyl alcohol, but aside from this, it may be broken. If the device is out of warranty, you may be able to argue the case with the seller under SOGA provided the damage wasn't caused by yourself, however it may be worth just purchasing another dock connector and replacing it yourself. Not a difficult job, just a bit fiddly, from what I can see: http://www.ifixit.com/Guide/Installing+iPhone+4S+Dock+Connector/7278/1

Fixed the issue, it looks like a full reset doesn't actually reset everything as you'd expect it to do.

I use a pair of Bluetooth headset with it, which I've just paired up, it then gave me the option to either play sound from the iphone or the headset. Selecting headset played music and it all seems to work fine.

Now, fair enough the fault looks to be somehow related to the BT headphones, but surely a full reset should have fixed the issue...
