Currently have Win 7 on a single 500gb 7200.11 drive which is partitioned into 80gb for the OS and the rest is used for temp storage. Mobo is running in RAID mode already.

I have a spare 500gb 7200.11 drive that I'd like to add to form a RAID 0 pack and partition into 100gb and the rest.

Now what's the best way of transferring my current OS install? Can I ghost off (or similar) the current install, create the RAID 0 pack and drop the image back on? Or will I need to do a re-install?

As you say just ghost your current install onto the other parttition, burn the image to disc create your array then ghost it back.
Done it a few times without any issues

But once you create the array all the data on the drive will be lost ( but you knew that anyway )

You say the motherboard is running RAID mode already, but are the correct drivers installed? Before you ghost it off, get a single disk RAID0 array working using the spare disk to ensure the RAID support it there otherwise you might ghost without the OS support and find it bluescreening on startup.

Yeah, Intel Storage Manager and associated drivers are installed and running. Changed the config to RAID from AHCI sometime ago using the registry hack that's bandied around the internet. I also see confirmation on boot that the disks are configured in Non-RAID mode.
