Not sure which GPU to aim for

I've tried looking around, at benchmarks, numbers ect. But I'm struggling to make sense of it all. I don't really know what to go for.

AMD or NVIDIA?
What are the real main differences they offer?

And I'm looking for a card that could handle games like the wither 3, gta 5, shadow of mordor, the new star wars battlefront, at 1080p with a min of 60fps comfortably.
And maybe a card that will handle 3440x1440 to compare to.

Any card suggestions that could work for me would be appreciated.

Budget: I'd like to spend around 250-300, but I honestly don't know if that budget is realistic.

PSU: Seasonic 650w

Monitor: LG 34UM95 3440x1440 ultrawide
Current GPU: Radeon 7870 HD x-edition
 
Excellent for 1080p, but if you want 60 frames and all the details available @ 1440p you'll need a 980ti (and even that one can go below 60).
 
Two options at the mo for decent and high end gaming. They are the R9 390 and the upper budget the GTX 980 Ti.

Honestly wouldn't bother considering anything else.

What does it do better than the 970?

There's a reason we compare it more to the 980 than the 970... And that's because it's more comparable to it :P At 1080 they're similar with the 390 a little ahead, but at 1440+ it trades with the 980.
 
The 780 is about 20% slower, less power efficient and has less Vram (noticed now you said 6gb. Well it won't matter, you'll need more raw strength before those extra GB of vram become useful).
Unless on a tight budget I would let it die peacefully in the past.

A single 970 is way ahead and overclocks very well.

Why?
You want to play @1080p? Either 970 or 390, but don't factor in the extra Vram as at that resolution it won't matter.
It won't matter even if you go higher, because other things will hold you back before the Vram becomes a factor.

Anything 1440p and beyond the 980Ti is the one to get.
 
Sorry, when you said 780, I some how had the 390 in mind.

Thanks for the info. Why does the 390 have extra vram? Is it useful for anything?
 
The extra VRAM is primarily helpful when gaming at higher resolutions - however, as it stands - the GPU won't be able to keep up with the extra rendering required at higher res thus take advantage of the extra RAM. I'm presently gaming at 3440x1440 and need between 4-5gb depending on the game.

If I were to choose at the level you are considering, then I would go for the 390 because the extra RAM can't hurt, but more than that - the GCN architecture. It may get a nice boost in dx12 - but this is highly speculative. I'm not sure in which direction dx12 is going. How long do you intend to keep the card?
