Well my 6950's are the same as these in crossfire, so IMO your 580's will be marginally better. I would wait just a little longer and see if these overclock amazingly, or the gtx 685 comes out.

Just buy a higher res monitor, then you can justify the new graphics card. Although justifying the new monitor may prove troublesome.

not with todays games, but if you plan on keeping it for more than a year, it might help a little, but probably not unless you want to be playing with 8x AA all the time
