Ok, so set up a scope for the wireless clients in work. 10.100.120.10 - 10.100.123.254 subnet 255.255.252.0.

All has been working fine until recently where everything with a 10.100.120.x address is fine, but once it goes over into the next range (10.100.121.x) the devices are assigned the correct gateway etc, but cannot get internet/internal access and can't even ping the default gateway

What gives? Is it the DHCP server or the wireless controller (Dell Aruba)

into the next range (10.100.121.x)
That is not the 'next range' on a 10.100.121.0/22 subnet, it is the same network (range). The issue is as above, the clients have the wrong netmask assigned or the router has, that's what it seems based on what you've put.
