Dry-aged steak was a little overdone (turned out medium rare rather than rare) but was really delicious. So incredibly rich.

Depends how big your brisket is...

If it's close then put a big ball of foil underneath the centre, hopefully lifting it up enough for it to fit. Obviously you can remove it once the brisket has shrunk down sufficiently.
