Buy a thermapen, instant read, very accurate and reliable. Very high quality and even made in the UK. Not especially cheap, but absolutely worth the money, I wouldn't BBQ without one.

So my question now, is what charcoal should i be looking at? I'm thinking starting with a bag of Aussie Heat beads, any essential accessories I need, other than a chimney starter and a temperature probe?
Any suggestions on what to christen it with ? tempted to soo if i can pick up a rack of spare ribs and give them a nice low and slow

PicsToday (well overnight for lunch tomorrow) is the first proper smoke of the year for me - packer brisket, 2.5kg pork ribs, two spatchcock chickens and maybe some pork shoulder.
