I have some synthetic oil left from this time last year when I did an oil change, assuming the bottle has been resealed properly, should this oil be OK to use in my next oil change? I know the cooling properties of oil changes as it ages but does it apply to stuff in the bottle which has simply been opened but not used?

Should be fine if sealed as you say. I usually have a 5 litre top up supply which lasts ages as I use it a half litre at a time between services.

itll be fine provided it wasnt stored in a pond.

cars now have oil change intervals of upto 2 years and the conditions in the engine are far worse than those inside a sealed bottle
