I've just discovered the expose-like behaviour when you click and hold on an icon in the doc.
Is there a way to make this work when I hover over instead, so it works in a more Windows-7 like way?

I am not sure what you mean. Clicking and holding over an icon in the dock brings up a couple of options which are identical [almost] to every other icon in the dock...

If you want to hide stuff on the desktop - press F11.

Or he can set up hot corners, I find them really useful.

SiriusB, for me clicking and holding the dock icon brings the window into view same as exposé with quit/hide/options too (Snow Leopard). Not sure how you would adjust settings to make it happen over hover though.

Speaking of exposé, I only recently figured out the excellence of hitting tab in expose to skip between applications, showing all the windows in each app!
