Overclocking a vga card

Never really overclocked vga cards before as my old one was a x800 passive already at xl speeds at stock. My new one is a sapphire x850xt with a zalman vf700cu cooler. Got one in mm for sister but also bought an identical one for myself. Ive been using ati tool to monitor the temps and they stick below 55 (passive would go up to 75). I set it to find max core and it got to 560 and then screen went black. Similar situation with the memory. At the moment its at 550/550 but i reckon it can go higher. For cpu overclocking i know what im doing but couple of questions:

Why does graphics card temps increase at higher clocked speeds when cpu temps only increase at higher volts?

Which makes the most difference in cad and games - higher core or higher memory?
