I'm a huge Paella fan, I just love the variety in such a great dish. Never tried to make it myself however.

It's true theres probably two million and seven ways to do it via google but I'd like a more personal opinion and maybe a bit of guidance, my main boggle is the rice, rice brand, time to cook rice etc etc. Any ideas/info appreciated.

A good tip would be to get on Youtube and watch a master make it, Keith Floyd, Rick Stein etc.

Surely on youtube you can find a proper spanish chef. one of those 60 year old wrinkly old fellas who's been cooking it since they were 6 years old. That must be best for authentic paella.

Well, you'll want to get hold of some proper bomba paella rice, saffron, paprika (sweet and hot) for starters.

The rice is the main thing, so if you can practice making that and nail it, you'll be able to take your paellas anywhere you want to.
