PANCAKE DAY

few days ago - A****** pancakes & 'good guys' Maple syrup (need to eradicate the A word from language , similar to X)

used to use Aunt Jemima's, but now have a reasonable diy recipe using apple cider vinegar & bicarb instead of buttermilk;

for authenticity, should really have a scoop of beaten butter, like you get in the United Colonies.

Partner went fairly off-piste with ours, she cooked a smoked mackerel and cream cheese mixture and fried bacon bits to go in the batter. I was delegated the job of actually frying them, very satisfying watching my carbon steel pan wipe clean with not one stuck bit on it.



Edit: the bacon made it hard to get a thin and round pancake. I'd like to go again this week for some classic lemon and sugar ideally.

British with lemon and sugar, and Scotch with Lotus Biscoff.


American pancakes just Scotch pancakes but a bit American?

Did a couple of savoury pancakes yesterday. Comte and Emmental cheese with some good ham on top in the middle of the pancake, add a fried egg on top and then fold into a square around it. Yum. 2 of those. Followed it up with 2 more with oreo ice cream and some mini marshmallows which I then blowtorched to be toasted and gooey.

There was some mix left over so I finished off with a traditional lemon and sugar one.

Other half had a similar amount, but instead of the fried egg had pineapple... (I know. :rolleyes: She even tried to get to have it on Pizza. So wrong...) and then had 2 with lemon and sugar.

I had two in the end, filled with clotted cream and blueberries, and covered in maple syrup. :D
 
We had scotch pancakes, so American but actually Scottish style. I was traumatised with the English ones by Scouts.

We had one round with bacon and maple syrup, which was lovely, and a second round with berries and chocolate syrup, which was alos lovely.

I messed them up a little bit though - slightly too much baking powder and managed to burn the bottom of a few.
