Partition with RAID 1

At the moment I've got a Raptor 74Gb 8Mb cache drive (OS, games, apps) and a 120Gb Seagate SATA I (mp3s, movies, photos). I only have one instance of my photos which hold value to me so I backup on DVD sometimes, but I've considered getting a RAID 1 setup to be certain I won't lose my data.

To replace this setup I going to get two Seagate 7200.10s 320Gb and create a 70Gb for Windows and leave 250Gb for data, this would then be mirrored to the second drive. Is this sensible, I also tend to format one a regular basis (6 months or so) so would this again be a sensible structure. Reason I'm contemplating getting rid of the Raptor is these are meant to be fast drives and by doing this upgrade it won't cost me much.

Never setup RAID before, and don't know much about it. Don't think it should be too taxing but mainly concerned about this for formats, not sure how it would work.
