My point is that I could create a subdomain purely for email purposes and it won't respond to any pings or nslookups. I could send you an email from info.a-s-i-m.co.uk right now and it won't respond to any pings or nslookups.
So it's a terrible attempt at verifying a domain's validity, let alone an email's validity.

That's why they tell you not to reply to the addressOkay, it may not respond to any pings or nslookups, but an IP address should resolve to itOtherwise, how's my computer supposed to know, or better yet, how's my mail provider supposed to know where to send my reply to your e-mail from info.a-s-i-m.co.uk? Without an IP associated with info.a-s-i-m.co.uk, sending an e-mail to it, would just be like sending an e-mail to a brick wall.
(I didn't mean to sound snappy btw).
It looks like a totally generic automated email. Maybe their automation is a bit too sensitive?
If paypal say there's nothing wrong then you shouldn't worry at all.
For peace of mind, just change your PayPal password.

Its legit, I have a number of emails from that address, some containing the last 4 digits of my credit card number advising me it had expired (which it had) They also send their news letter from that address so I have no idea why they would tell you they don't send emails from that address.
The PayPal emails have a view online option if you can't read them and this directs to a legit site, see image below

It shows as Completed when PayPal have processed their side - it doesn't mean it's gone through. It usually takes 2-3 days for the money to be cleared by the bank.
They usually get declined due to the account having a slightly different name than the name PayPal are using to move it across.
I hate them too, if it's any consolation.
My bank (HSBC) did reject a transfer once, despite using the same details as every other time. I use M PRICE on PayPal, and M J PRICE with my bank.
That was the only explanation they could come up with - so it's possible. I tried again when the money came back to PayPal and it worked fine.
