I have the Johnsbo N5 and the first thing I did was replace all the fans with Noctuas from my old PC I was putting into the case. I also took the 2xfan controllers too (Phanteks). I have them running from BIOS with the silent profile, and it's not very loud at all.
The fan controllers on the HDD expansion boards peg the included cheap fans loud, so I can understand those complaints.
I don't find the build quality bad, but you have to make sure you understand how much space you have inside and therefore what you can fit in it.
EDIT: Also, I have an i7-7700K in mine with my old ROG MAXIMUS IX FORMULA board, 32GB 3200 RAM, 3 HDD, 2 nVME, RTX3080, 850W PSU, 9 fans across 2 controllers and a 120mm AIO, and it has an HBA card in it for future proofing. It idles at about 30-40W according to my UPS
