Yes it will still overclock well.
As said I'd get the OCZ XTC PC6400 2Gb or the Geil 2Gb ULL PC6400, both are better and cheaper than the Corsair.
And get the OCUK value 8800GT 512Mb it's not worth going for 256Mb as the performance is a lot worse.
Other than that the list looks fine but if you have a bit more to spend then get a P35 motherboard rather than P31.
