Just get a new GPU.

8700K is fine for gaming.

First of try with just a gpu upgrade and see if you are happy with the performance then. 3060ti would be a significant performance upgrade or even some great deals on RX 6700 or RX 6800/XT. New cards coming out in next 6 months so either look for a super deal or wait.

Secondly , i9 11900k is a really really bad choice and getting it trying to save money by keeping your 360 AIO is a false economy. If you cannot get a 1700 bracket for your AIO then just buy a new 240/360 and go for 12th gen 12600k/12700k, the i9 almost never make sense for anyone. If you really want to keep your AIO then the new AM5 platform is compatable with AM4 mounted coolers so that may be the best route because I assume your cooler came with AM4 mounting kit.

That's a great upgrade! The Intel Core i9-11900K is a great processor, and the ASUS motherboard you're looking at should be compatible with it. You'll also need to upgrade your RAM to DDR4-3600, as the 9700K only supports DDR4. As for the graphics card, you can stick with the RTX 2060, or upgrade to something like the RTX 3070 or 3080 if you want more performance.
