any of you guys ever had peanut butter noodles? they are dead nice.
1 nest of medium dry noodles cooked then put in a bowl then make a paste out of 1 generous teaspoon of crunchy peanut butter, 2 generous teaspoons of soy sauce and a 1/4 teaspoon of English mustard. mix that lot up and then add to the noodles along with a chopped spring onion and add ham if you are not a vegi. really nice , easy to make and better than an instant noodle packet imo.

Would that be light or dark soy sauce (I have both)?

Heard of it during Covid. Kara & Nate (YT travel channel) was living in a van it was her go to meal.

Cut and past from here.

------

This is for 2 servings (keep in mind i have no idea what i'm doing):

Ingredients:
Olive oil (or whatever you like)
4ish Garlic cloves
1ish inch fresh Ginger
2 of your favorite instant ramens
Salt
Pepper
Coconut aminos
Cayenne pepper
Peanut butter
Fresh Cilantro
Green onions
Toasted sesame seeds
Sriracha

1. Sauté the garlic and ginger with some olive oil
2. Add water (or veg broth!) and make the “sauce”
3. Add the seasoning package that comes with the ramen if you want, or make your own:
4. Add coconut aminos (Idk, maybe 1/3 cup?), salt, pepper, cayenne (if using soy sauce, you don't need as much or any salt!). You could also add the chopped green onions here to cook In the sauce
5. Stir in 1ish scoop of peanut butter
6. Add in noods and let it all cook together
7. Put in bowls and add fresh cilantro, green onion, sesame seeds, and sriracha!

I have a version of this that I make with udon noodles and its my go to 5 minute meal.

Fish sauce
Sriracha
Toasted sesame oil
Some finely sliced spring onions on top

Absolutely delicious and is ready in 5 minutes start to finish.

Replace the sriracha with some chiu chow chilli oil and bung a piece of grilled chicken on top, and that's a fairly standard go to lunch for me!

Here's my contribution to the Peanut Udon recipes.

Peanut Udon Noodles

Ingredients:

3 tbsp peanuts
1 tbsp white sesame seeds
3 pieces garlic
2 sticks green onions
250g udon noodles
1 tbsp chili oil
1 tsp sweet paprika
1 tsp toasted sesame oil
1 tbsp soy sauce
1 tsp dark soy sauce
1 tsp rice vinegar
1 tbsp maple syrup
2 tbsp peanut butter
2 tbsp water

Directions:

1. Bring a pot of water to boil for the noodles

2. Heat a frying pan to medium heat. Add the peanuts and white sesame seeds. Toast for 1min. Transfer to a pestle and mortar. Then, coarsely crush and set aside

3. Grate the garlic and chop the green onions

4. Boil the udon noodles for half the time to package instructions (in this case 3min)

5. Heat up the frying pan to medium low heat. Add the chili oil followed by the garlic. Cook for about 45 seconds. Then, add the sweet paprika, toasted sesame oil, soy sauce, dark soy sauce, rice vinegar, maple syrup, peanut butter, and 2 tbsp water. Give the pan a good stir

6. Strain out the noodles and add to the peanut sauce. Add the green onions, turn the heat to medium, and cook the noodles for a couple of minutes while stirring

7. Plate the noodles and sprinkle over the crushed peanuts and white sesame seeds

Sounds like a lot of work mate :p

Yeah, you can do all sorts with this sort of recipe. Sometimes I stick some chicken/goujons on the top. Often fry an egg or two for it. Sometimes stick some kale in with the udon to make it a little healthier. Chop some spinach into the final dish.

Asian cooking in general has some really quick an easy meals if you have a good base. I cook a lot of short grain rice that lives in the fridge and makes delicious rice bowls in 5 minutes.
