Performance question

Hi, I am going to replace my 2 samsung 160gig HD. Should I get 1 500gig or 2 250gig HD (at the moment one has my OS on it and the other has the swap file on it) they will be repalced with Hitachi drives. Also is there much of a boost with 16mb cache over 8mb cache?

No raid, just for the last few years I always had 2 hard disks in my computer. I never thought about it as a performance issue until now?
