What to the rollers bring to the party? I've only really noticed them on older machines...

Good rollers will create proper stripes on your lawn.

Ah I assumed that was from being cut either a different way or at different lengths...
Rollers aren't just there to create a stripe. They help promote a thicker lawn by breaking the blades of grass near the bottom which encourages growth from this break point and thereby creating a thicker lawn.
Its the same reason farmers roll their fields. They certainly don't do it to make them look pretty.
