How do you overwrite the save as function n set it to say jpeg setting 6

Im a little confused, i have interpreted what you said as you want to have a specific jpeg setting for batch processing.
If that is the case, the setting is specific to the action you create, and is saved with in it. So if you wanted it to override the save as function and batch save at setting 6, you simply need to make an action where when saving you change it to 6.
