I love "crushed" potatoes with herbs. Peel, cut into 2cm cubes, boil for just 10 minutes to soften them up, then either roast or deep fry until crispy. Stick them in a bowl with salt and cut herbs of your choice and give them a very quick crush with a masher. Add chopped red chillies and you end up with a fantastic "crispy mash".
