How long should I run the torture test?

I wanted to see how hot my 2700x got without being overclocked on the supplied wraith prism stock HSF.

I topped out at 76c after 15 mins but, I had the fan running full pelt along with x2 Noctua NF-A12x25 pulling air in from the front of the case at roughly 70% speed. I still thought that was kind of a low temp and maybe I need to run for longer, though I'm not testing for stability (no OC) just to get a reference temp.
How long should I run the torture test to get a good representation, was 15 minutes long enough just to get a handle on temps?

As mentioned - if testing temperatures, you test until the temperatures stabilise. This generally includes some heat soaking of the case and components but on air, it's not too long.

I'm always confused when people state a duration of time when talking about cooling!
