Probably an obvious question

As I have a Asus P5N32-E SLI Plus mobo (with an Intel E6420 processor), I assume I can only install the 32bit version of Windows 7?

Oh right. So it isnt down to the Mobo then? I thought the North/south bridges might have something to do with it?
In that case, do I need specific 64bit drivers and programs or do they not matter?

There are specific programs/drivers for 64-bit, but 99.95% of 32-bit programs run fine. I have been using 64-bit Vista since it was released (Now also on Win7) and have yet to find a program that doesnt run.

The only requirement for a 64-bit OS is a 64-bit CPU.

You will require 64-bit Windows 7 drivers however, but these are pretty widespread.

Most programs will work, they will run in 32bit mode.

Drivers check the manufacturer website for latest drivers, ie Asus for motherboard drivers and Nvidia or ATI for GPU drivers and choose 64bit version.

Been running 64bit for the past couple of years with very few problems.

Some software will "not support a 64 bit OS". This usually means it might work or it might not. The production company hasn't tested it under the 64 bit OS. If it works great. If it doesn't they don't have any intention of fixing it. Their attitude would be to use at your own risk. This is more of a support thing than a technical thing.
