Success! I had some dough left over and tried again. My IR thermometer is starting to come in handy. I put the hob on 3 and let the pan get to 320F, then placed the welsh cake dough in the pan, which I had coated with a thin layer of coconut oil. I had a window of about 8 minutes before it would get past 375 F and be too hot. Cooked the dough 4 minutes per side and the outside and inside were perfect.
