Would this affect something like the TripleHead2Go? I'm guessing not, as all three monitors run off the one output.

No the triple head 2 go will circumvent this sli problem. its expensive though, and im running 2x 3850 in crossfirex on 24" and a 19" flawlessly.

No....Looks like the 9800gx2 walks all over it...You wouldnt say the X2 is fast?Ok, its got two gpu's on it, but so does the GX2

9800GX2 may be quicker than the 3870X2 but it costs as much as the price of a 3870 and a 3870X2, so you may as well opt for the crossfire solution.
