but I have three in my machine and they are not loud at all for day-to-day use.. from what I can see UK e-tailers only stock one type if you go to the US site that stocks the whole range you can buy some powerful fans that arent quite as insane as the model thats stocked in the UK.. For a heatsink you want a fan that produces a high static pressure.. are some reviews around will have a look for you
those were ruff figures taken from the Q6600 thread.. if you have a nice low VID G0 then you might get a little more
and ofcorse it depends on case airflow and ambient temp 
shame tbh that OCUK dont stock them

but tbh assumming you are careful I have found each kit will do a CPU and Heatsink with no problems
The kits come with very detailed instructions which are excellent for first time lappers and as you say comprehensive range of grits which lets you get a really nice finsh..
