Loving this build, have something very similar planned myself once the C2 stepping is out.
Great work there...

One thing that I was reading about when I was researching SB-E is that a couple of reviews mentioned how the chips surrounding the CPU were getting very hot when overclocking a a good air cooler was recomended that would move air over the whole area.
What sort of temps are you seeing with the watercooling, are you seeing any increases in the surrounding chipset?

I read some horror stories about gigabytes X79-UD3's VRM's frying, there's a vid on youtube of it happening, Gigabyte then released a new BIOS (F7) that has better OCP and OTP parameters, so before any overclocking I flashed the mobo's BIOS to F7

Not had any issue's with VRM temps, I was priming at 4.7Ghz (1.365V) and the VRM temps hit 45C after about 30 mins and stayed there. Obviously the more you overclock the higher the VRM temps will be, at stock they were about 32C

I do have 3 1200RPM yate loons pulling air away from the VRM heatsink so that obviously helps. Aslong as the mobo has some air flow it'll be fine :)
