What should the set-up of the fans be like inside the PSU?

As I have got it atm:

Fan1 at rear of PSU sucking air in

Fan2 at bottom of PSU sucking air in

Is this correct or should Fan2 be blowing air out into the PC?

Are you sure? Is this is a new PSU? Best way of checking is to take some tissue paper and wave it in front of the PSU and see if the papers sucked in or blown away from the PSU.

i thought the idea of the fans was to pass air through the psu to cool components not exhaust air from the machine ?

t'other way round :)

PSU's remove air from the case and out the back, don't think I've ever seen one with the airflow the other way round..

Yeah, PSU get warm inside, passing air through them into the case would be counter-productive.

Can somebody do a quick test for me with a piece of paper or something just to let me know what the fan config should be?
