I have a joint of smoked gammon I am going to be roasting tomorrow.

It will be served with savoy cabbage cooked with ginger, chilli and mustard.

Any suggestions on an interesting marinade to use for roasting the joint?

I was thinking something along the lines of cloves, chilli, all-spice, thyme, garlic, honey. That sort of thing.

Interested to see any other responses as I roast gammon quite a lot for my sandwiches, but the most I ever do to it is add honey and chilli.

My favourite is simply honey, wholegrain mustard. Cook the gammon with cloves studded in the joint, so don't add more.

Depends what sort of thing you want. You say punchy?

I usually stud a joint with cloves, lob a couple of fresh bay leaves in (we have bay leaf plant in the garden), a good glug of strong cider (eg Old Rosie) and the honey.
