not ambidextrous no. but good at multi tasking as you are dealing with so many different things all the time.

1. topping up pellets every 2 minutes - if they get too low the temp will drop. so make sure it's topped up. if it gets too low when you top up you could smother the flames and then need to light it again. so it's something you need to do in small handfuls but regularly. don't try and cheat it by throwing in tonnes at a time. so any time you have a spare 15 seconds. open it up and take a look and put in a small handful of pellets.

2. rotating pizzas every 30 seconds (otherwise one side will burn). stick pizza in. wait roughly 30 seconds. then rotate it. i do this by grabbing the front door with one hand and taking it off. peel in other hand and i scoop the pizza up. i then close the door to keep the heat in. now that hand is free as i'm no longer holding the door, i transfer peel to that hand. grab the wooden peel with other hand and rotate the pizza. i then put wooden peel down. swap hands and open the door and put the pizza in and close the door. you want do do this as quickly as possible. so the oven temp doesn't drop and the pizza doesn't have a chance to cool down. i know someone who rotates their pizza's every 15-20 seconds to get it more even all over. but i think once is enough.

You cant have the pellet chute set right, i often put a funnel on the top of mine so i can fit a large amount of pellets in so i don't need to keep adding all the time. Easy lasts 30 minutes.

I only use my wooden peel for the initial launching the pizza into the oven so it doesn't stick, after that use the metal peels to turn but have it down to a fine art. One quick push and the pizza is on then a few circular shakes and the pizza rotates then launch back in, all taking about 5 seconds.
I have seen a fantastic mod where someone has used a circular stone and put a motor underneath to rotate the pizza while cooking, plus a larger flame guard helps stop the burning.

i have the pellet chute with the screw halfway as is recommended on the web. they also recommend you top up pellets to the screw to allow for better airflow. rather than to the top.

Baking steel plus grill is the way to go to be honest. You can get a pizza cooked in 3 minutes, which is pretty good going for a home oven and about as good as it gets without more specialist equipment.
I watched the YouTube video posted in this thread and I have a steel. So I heat the steel up in the oven for say 45 mins then put grill on for 15 then put pizza in ? Tirn grill off. Rotate after 90 to 120 seconds ? Then grill back on again ? Should be close to done in 5 minutes ish ?

Pretty much yeah. Depending on your setup you may want to leave the grill on throughout. I do that personally with the pizza about 6" away from the element and it's fully done in about 3 mins.

I don't think my oven can have the grill and the oven on at the same time there is no ''broil" setting. I def got pillowy crusts but not charring . 5 mins first pizza 10 minutes second.

Oven to preheat for the hour or so, then grill to keep the oven hot and also apply direct heat to the steel to get the temp up. Then leave grill on and put pizza in so you've got two sources of scalding heat. Result should be a bit of blistering/charring (though it will be minimal compared to an electric pizza oven or wood fired) and a cook that takes around 3 minutes.

whats the best basic recipe for making your own pizza base.or shop brought option ?

no chef ramsey thing.havent got the time.cheers !

As jpaul said, there's lot of recipes in the first few posts here.

Basically though for a 9" pizza you're looking at:

120g flour
80g water
2g salt
teaspoon of olive oil (optional, I don't personally)
1/5 sachet of dried instant yeast

Mix together in the morning and cover. Don't bother to knead. When you get home from work, re-mix and shape into a ball. Leave to rise for an hour or two covered in a bowl with a damp cloth then flatten out and cook.

About as simple as you can do it. For a larger pizza just scale the recipe up by 50% for all ingredients.

Interesting read that, I was thinking about some cheap pellets for my smoker but seems these aren’t the way to go as while food safe for use in the uuni they are designed for heat not smoke - I would defi go for them in a uuni and I do fancy one of those!

just buy smoking chips and throw them on top. or douse a few of the pellets with water and throw them on top
