Question regarding boot SSD

At the moment ive got a Samsung 850 evo 1TB as my main boot/games drive.
The question is i want to get the following motherboard but i want to install a m.2 SSD just for windows and a few things.
Question is when i come to installing the m.2 on the motherboard when i change over. how do i sort out boot and installing of games after that.

I want the m.2 as boot
but use the Samsung to install the games on because its a 1TB.
When i used to run a 10,000 WD rapter i had to use this for ever think and it got full quite quick.

Bios? Take out SSD and make sure first boot is m.2

Install windows on that.
Install SSD and format and use that for games etc. Point games etc to that when installing them.
 
As in the past i had to have them installed on the same Disc drive as the OS. normal drive c. so thats not the case now. or do i have to sort it out in windows for games to be saved on that drive..
