Personally, I would stay off the RAID drives unless you have a real need for speed- While they will give you a small performance benifit, I think that the reliabilty problems with RAID 0 (If one drive goes you have lost the whole lot of data) don't really justify it.
My solution would actually be a hybrid :D - 2x 200gb drives in RAID 0 for installing all the apps/ Windoze on, & then a separate 100gb drive for docs and data, which should give you the best of both worlds.
