questions about using 2 hdd's and another question

hi,how would i go about setting up 2 hdd's 1 for the OS and 1 for everything else,also how do i copy all my data like xp and programs from 1 hdd to the other?.1 hdd is a WD 1TB and the other will be a WD or sammy 320GB(gonna use my old 160GB that as xp and everything on it till i can buy a WD or sammy hdd).thanks
