I'm about to make egg fried rice for the first time,
some recipes say to add the beaten egg first of all
and others say to add it after you have put in the rice and other ingredients.
What do you normally do? and does it matter?

Just a really quick question :D
 
Make sure you use cold pre-cooked rice, it will be rubbish otherwise.

When I'm doing it, this is what I do:

Heat vegetable oil in wok until smoking.
Add beaten egg to wok, stiring continuously.
Once egg is cooked add the rice and continue stiring.
Add a splash of dark soy sauce and sesame oil to the rice.
Just before the end add some chopped spring onion.

Of course you can add anything else you like to the rice, this is just for basic egg fried rice.
 
I've tried both ways and prefer cooking the egg separately and adding it to the rice - only my preference though

This. i certainly wouldn't put it in at the start. it would be tough and burnt by the end. Also needs to be cold rice, preferably a day old..

I cooked Rice this morning, drained it and its been in the fridge so fingers crossed it's fine . Thanks guys for the tips i'll probably put the egg in first like the video and most of you suggest :)
