Hey guys - bought the following several years ago (still works like a charm):

Gigabyte Z68AP-D3 Intel Z68 (Socket 1155) DDR3 Motherboard

It came with:

Kingston HyperX Genesis Grey 4GB (2x2GB) DDR3 PC3-12800C9 1600MHz Dual Channel Kit (KHX1600C9D3X2K2/4GX)

I've added another two sticks over the years to make 8GB but I cant help but think a little more would be good (16GB)

Assuming my board can handle more, what would you get? (£75 max).

The package I got at the time had a pre-set overclockers, 'overclocked' setting in the bios - will changing the ram stop that working? It boosts the 2500k to 4.4ghz.

thanks

You won't gain anything going from 8GB to 16GB, unless you are doing anything memory intensive e.g. running Virtual Machines, or regularly working with large images e.g in Photoshop.
