RAID 0 Set-up

Hi all,
Newbie here with a few questions I could not find answers to shifting through threads:-)

Lucky enough to have purchased the i7 920 overclock bundle with the Gig ex-58 board. I have built the system but am awaiting on 2xSamsung F3 1TB HDs which I will configure on RAID0.

1) what is short stroking and should I be thinking about partitioning?
2) What file format should I be using - will the EX-58 automatically format to FAT32 when I use the RAID configuration within the BIOS?
3) I have purchase a coolmaster 922 for cooling reasons, and have stuck a 850w 'be quiet' PSU in to keep noise down. I powered the rig up a day ago (without HDs) to check that everything was running in toleranc - i.e. no flashing LEDs - all was well:-). However. I did notice that the case/CPU fans were low noise, the ATI HD4890 fans were running at full speed and chucking out a load of noise - I hope this is not the normal state of affairs. Once I install the drivers should this be managed/controlled by them and run at a more stead pace i.e. low noise?!
