I am going to use two old 300gb 3gbs sata II hdd's in raid 0 will this give similar speeds to a single 600gb 6gbs sata III hdd?

It should be faster.
The interface speed doesn't matter on mechanical drives. They're not fast enough to saturate a 3Gb/s connection, so 6Gb/s makes no difference.
Hopefully you've considered the reliability of RAIDO before using it.
