Is it possible to have two SSDs (Corsair Force 3 120GB) in RAID 0 whilst being backed up in a RAID 1 config to a mechanical hdd (640GB WD Green)???

it is possiable but you would lose a lot of the performance from the SSD
i would say your better off going raid 6

240GB RAID 0 SSDs + rsync/robocopy to 640GB.

Set up your SSD raid 0, install OS. Clone 240GB volume to WD 640GB.

Set up rsync/robocopy cron/scheduled task to keep both sides sync'd.

If your RAID fails you should have a bootable copy on the 640GB.

It's not RAID, but it'll do what you want it to more or less. How up to date the "mirror" is depends on how often you run the rsync/robocopy cron/scheduled task.

As a side note, I'd partition your WD 640GB into a 240GB + 400GB volume. 240GB for the SSD "mirror" plus 400GB storage or whatever.

Raid is not backup.
A backup is a spare tyre.
Raid is a run-flat tyre to get you to the garage if your tyre fails.

use Raid 0 and do regular backups to the external drive.

Your RAID 0 is 240Gb. Your WD is 640Gb, so you can store at least 2 backups and probably 3 (given any compression in the backup software).
