Is it possible to have a combination of having ultra-quick loading and constant backup of all my data? Would also require lots of storage space (1TB minimum).

Remember RAID is not a backup solution, it's an availability solution. While it will provide protection against an HDD failure it will not protect against file corruption, accidental deletion etc.
There's nothing wrong with running RAID0 and an external backup drive but if you do want redunancy then RAID10 is probably going to give you more bang for the buck than RAID5. It doesn't have the parity processing overheads of RAID5 and hence doesn't need an expensive hardware controller to get decent write speeds.
